Christine Barone, CEO of True Food Kitchen, never thought she’d end up in the restaurant industry.

When she went to college, she studied astrophysics.  Her “understanding of numbers” is now paying off in the restaurant industry because “restaurants are expensive to build,” she told a group of operators and suppliers attending CohnReznick’s 2019 Los Angeles Restaurant Technology Summit Thursday in Santa Monica, Calif.

Since she became chief executive of the Phoenix-based casual-dining company three years ago, True Food Kitchen has grown from 12 to 28 restaurants.

By the end of 2019, the company, which last year received an investment from media mogul Oprah Winfrey, is projected to generate $200 million in sales.
