Longtime Waldorf-Astoria chef exits

NEW YORK John Doherty, executive chef at The Waldorf-Astoria here, said Tuesday he has left the landmark hotel after 20 years to form a restaurant development company.

Doherty said he has formed JCM Hospitality Group with industry veterans Mark Wood and Christian Palikuca.

Wood has worked for Jeffrey Chodorow’s China Grill Management as well as chef-restaurateur Matthew Kenney’s Mediterranean Equities.

Palikuca was director of operations at Daniel in New York City before becoming chief operating officer of MARC, a restaurant company that operated top-ranked restaurants in Connecticut as well as A Voce in New York City.

Doherty was the youngest person ever to serve as executive chef at The Waldorf-Astoria when he has named to the post in 1985 at age 27.

Peter Daledda, the Waldorf-Astoria’s executive sous chef, is currently leading the hotel’s culinary team.
