True Food to Go will offer new menu items such as flatbread as well as alcohol

True Food Kitchen, a casual-dining chain that focuses on health and well-being, plans to open its first limited-service restaurant this summer in Tempe, Ariz.

True Food To Go will be located at 950 S. Mill Ave south of University Drive. It will feature a walk-up counter, self-checkout, and shelves to pick-up online orders. It will also offer indoor and outdoor seating and a grass area for picnicking.

The menu will feature favorites from the full-service restaurant as well as new items including flatbreads, build-your-own-protein plates, and breakfast items that will be available all day. It will also offer several slushes with the option to spike them with alcohol. The restaurant will also offer beer and wine available for takeout and delivery.

Restaurateur Sam Fox and Andrew Weil founded the concept in Phoenix, Ariz., in 2008, focused on food that adheres to the anti-inflammatory diet that Weil developed. Fox sold the concept to P.F. Chang’s in 2012 and it is now owned by consortium that includes Centerbridge Partners L.P., HumanCo and Manna Tree. It has grown to 43 locations in 17 states.

“We are thrilled to bring our first takeout-only location to Tempe, as part of our ongoing efforts to provide True Food Kitchen fans with even more ways to enjoy our brand,” the chain’s new CEO, John Williams, who was appointed last month said in a press release announcing the new location. “Tempe is a vibrant, thriving city close to our brand roots and we are excited to become part of the community. This new takeout location will allow us to offer our delicious handcrafted food and beverages to more people in the greater Phoenix area.”

He joined Nation’s Restaurant News in 1999 after spending about five years in Thailand, where he wrote articles about business, banking and finance as well as restaurant reviews and food columns for Manager magazine and Asia Times newspaper. He joined Restaurant Hospitality’s staff in 2016 while retaining his position at NRN. 

A magna cum laude graduate of Tufts University in Medford, Mass., with a bachelor’s degree in history, and a member of Phi Beta Kappa, Thorn also studied traditional French cooking at Le Cordon Bleu Ecole de Cuisine in Paris. He spent his junior year of college in China, studying Chinese language, history and culture for a semester each at Nanjing University and Beijing University. While in Beijing, he also worked for ABC News during the protests and ultimate crackdown in and around Tiananmen Square in 1989.

Thorn’s monthly column in Nation’s Restaurant News won the 2006 Jesse H. Neal National Business Journalism Award for best staff-written editorial or opinion column.

He served as president of the International Foodservice Editorial Council, or IFEC, in 2005.

Thorn wrote the entry on comfort food in the Oxford Encyclopedia of Food and Drink in America, 2nd edition, published in 2012. He also wrote a history of plated desserts for the Oxford Companion to Sugar and Sweets, published in 2015.

He was inducted into the Disciples d’Escoffier in 2014.

A Colorado native originally from Denver, Thorn lives in Brooklyn, N.Y.
