Achiote is a bright red spice, also known as annatto, that appears in dishes spanning Latin American, Spanish and Southeast Asian cuisines. While only 3 percent of consumers are familiar with achiote, it’s making inroads on U.S. restaurant menus, with 49-percent growth over the past four years.
