Maggiano’s Little Italy will unveil on April 30 its first standalone menu that highlights the chain’s gluten-free offerings.
The 49-unit division of Dallas-based Brinker International Inc. plans to roll out the two special gluten-free menus during its annual Make-A-Wish fundraiser, held through July 8.
Jeff Mann, Maggiano’s research and development chef, said the menu will feature new items, including a cheese-filled ravioli that the chain developed with its supplier, prepared with cheese and spring vegetables.
The ravioli were produced in a plant that is cleaned, swabbed and tested for gluten before manufacturing the pasta, Mann said. Maggiano’s then sent the item to a third-party inspector to test that it met or exceeded gluten-free stand...
