Fast-casual pizza concept taps former Panera executive to build infrastructure for growth

Pieology Pizzeria has named former Panera Bread Co. executive Clay Sanger chief operating officer, the company said Monday.

Sanger previously served as regional vice president of operations for Panera Bread and its sister concept Paradise Bakery & Café, and as senior vice president of operations for SusieCakes Bakeries.

At Pieology, Sanger will oversee both company and franchise operations, including development, real estate, training, operations support, restaurant design and construction, the company said.

“We are thrilled to add an industry veteran of Clay’s caliber to our talented leadership team as we continue our nationwide expansion,” said Carl Chang, Pieology founder and CEO, in a statement. “We are committed to setting every member of the Pieology family up for success, and we’re confident Clay will help to add a new level of operational efficiency to the growing Pieology organization.”

Based in Rancho Santa Margarita, Calif., Pieology operates and franchises nearly 130 pizzerias, with 70 more units expected to open before the end of 2017.
