Future trends in the restaurant industry are notoriously difficult to predict with any degree of accuracy. As you may know, we Brits are not very good at shouting about our achievements. However, on this occasion I must ask you to forgive me if I start by patting myself on the back. 

Last March I wrote here, when looking at street traders and temporary pop-up operations, “We expect to see more conversions to brick-and-mortar by those concepts that are well received.”

And my crystal ball gazing has now become a reality.
