David Kellaway has been named managing director of The Culinary Institute of America’s third campus, in San Antonio.
Acertified master chef and Texas native, Kellaway previously taught at the CIA’s Hyde Park, N.Y., campus, but for the past 15 years has worked at various operations in Las Vegas, including Mirage and Mandalay Bay.
Until Kellaway starts March 4, director of education Shelley Grieshaber will continue to work closely with the school, although she has been hired away to fill the newly created position of director of culinary operations for Pearl Brewery, the CIA’s landlord in San Antonio and the operator of the 22-acre culinary gathering place on the banks of the San Antonio River where the CIA is located.
Grieshaber is a San Antonio native and a CIA graduate who worked as a chef and restaurateur in New York before returning to Texas to manage Central Market’s five schools there. In 2005 she was hired by Pearl Brewery to open the Center for Foods of the Americas at the company’s redevelopment project. That school became a CIA campus in 2008.
