Customers are clamoring for it. Operators are counting on it to boost sales. Expanded breakfast service — including high-margin coffees and teas as well as breakfast sandwiches and entrées — is shaping up as a major business opportunity in the restaurant industry.

Underscoring the grass-roots appeal of breakfast, National Restaurant Association research this year revealed that seven of 10 consumers, representing diners of all ages, said they wished restaurants would serve breakfast all day long.
