The dish: Ricci di Mare — Santa Barbara sea urchin minimally dressed with lemon agrumato, which consists of lemon oil, lemon salt, chive oil and chives; $13

The wine: 2011 Donnafugata Lighea; Sicily, Italy; $13 per glass, $52 per bottle

Grape varietal: Zibibbo

The pairing: The fruit and brightness of the Zibibbo grape perfectly meld with the rich texture and ocean brightness of the dish, allowing its delicacy to come through.

Wine tasting notes: Golden in color, the wine has a nose of ripe apricots, peaches and white flowers — such as rose and orange blossom — that belie a crisp palate of bright fruit such as Meyer lemon and pineapple. It’s bracing and refreshing.

More about the wine: This wine is made using sustainable farming practices.
