Mustard is a condiment created from the seeds from the mustard plant, which are ground up to make a wide variety of sauces that vary in color, from bright yellow to dark brown, and in flavor, from sweet to spicy. The ingredient is ubiquitous; it is listed on 50 percent of menus in the United States and awareness of it is high across all demographics. But chefs and manufacturers are serving up the familiar condiment, as well as mustard seeds and greens, in imaginative ways.
