DIG, the New York City fast-casual restaurant brand, announced on Friday the appointment of new chief operating officer Scott Nicholson. He will begin his tenure at the bowl chain immediately.

In his new role, Nicholson will oversee and achieve complex goals and implement efficient systems to promote operational success, according to the company.

“I have been a raving fan of DIG for many years. The commitment to offering high-quality food made from scratch has made the restaurant a go-to destination in the Northeast,” Nicholson said. “I am honored to be leading and building a strong, focused operations team that will help DIG fulfill its amazing potential.”

Scott Nicholson Headshot_DIG 2023.jpgKnown for its seasonal bowls, DIG is in the growth mindset. Nation’s Restaurant News’ 100 under 100, published earlier this summer, reported that DIG saw a 172.7% increase in unit counts year-over-year in 2022. The 30-unit brand added 19 net units that year.

The chain’s previous COO, Tracy Kim, was promoted to CEO earlier this year.

“It’s an honor to welcome Scott Nicholson to our team at DIG, given his record of impactful leadership and considerable knowledge of fast-casual operations,” said Kim. “As we embark on this new chapter, I have no doubt that he will play a crucial role in steering our company toward even greater success.”

Nicholson comes to DIG with over 20 years of knowledge in the restaurant industry. Prior to DIG, he was the chief operating officer at Pokeworks and the vice president of operations at Veggie Grill.

In his new role, Nicholson will be responsible for leading restaurant operators to strive for efficiency and implementing innovative strategies that ensure optimal operations. Working closely with the executive team, he will continue to build positive and productive internal relations that lead to excellence in brand execution with both sales and profitability growth, the company said.
