Marshall Claycamp has left IHOP to be the restaurant chain’s chief operations officer

Patrick Kirk, who was named Fuzzy’s Taco Shop’s chief marketing officer in April, has been handed the additional title of president, parent company Dine Brands said Friday.

Additionally, Marshall Claycamp has been named the fast-casual chain’s chief operations officer.

Previously, Claycamp had been executive director of operations services for IHOP, which is also owned by Pasadena, Calif.-based Dine Brands Global Inc., as is Applebee’s Neighborhood Grill & Bar.

In their new roles, Kirk will guide the brand’s growth, define the “Fuzzy’s Taco Shop experience,” and manage organizational aspects of the brand, and Claycamp will lead operations for both company-owned and franchised restaurants, according to a release from Dine Brands.

Before joining Fuzzy’s, Kirk was Applebee’s vice president of bar and beverage.

Dine Brands CEO John Peyton said Kirk's experience at the company positions him well in his new role.

“Patrick is no stranger to the business. At our sister brand, Applebee’s, he disrupted the casual-dining industry through beverage innovation, growing the beverage business into a $1 billion enterprise,” Peyton said in a statement. “Since joining the Fuzzy’s team as CMO, he has made an immediate impact. His knack for building strategic plans and forming strong brand and franchisee partnerships, all while focusing on creating engaging and fun guest experiences, is undeniable. I’m excited about the fresh expertise and creative thinking he will bring to our talented team.”

Kirk has spent more than 23 years in restaurants, having worked for Tony Roma’s and Buffalo Wild Wings before joining Dine Brands.

“I’m a huge fan of Fuzzy’s bold attitude and strong values,” Kirk said in a statement. “Since Dine Brands acquired Fuzzy’s in 2022, I have gotten to know the team and been impressed by how the brand brings its Baja vibe to life and connects with guests. I’m eager to dive deeper with the team and franchisees to unlock the brand’s potential.”

Claycamp had his previous role at IHOP for five years, and before that he was a franchise business consultant for the chain. All told, he has been with Dine Brands for 12 years, according to his LinkedIn profile.

“Marshall’s ability to adapt, learn, grow, and hone his leadership skills has prepared him well to assume this new role as Fuzzy’s chief operations officer,” Peyton said. “Marshall has a passion for restaurant operations, a commitment to our culture, and most importantly, a love for our teams. He is perfectly suited to lead our operations as we continue to grow our national footprint.”

Fuzzy’s Taco Shop was founded in Fort Worth, Texas, in 2003. According to Technomic, it had 132 locations as of the end of 2023.

He spent his junior year of college in China, studying Chinese language, history and culture for a semester each at Nanjing University and Beijing University. While in Beijing, he also worked for ABC News during the protests and ultimate crackdown in and around Tiananmen Square in 1989.

Thorn’s monthly column in Nation’s Restaurant News won the 2006 Jesse H. Neal National Business Journalism Award for best staff-written editorial or opinion column.

He served as president of the International Foodservice Editorial Council, or IFEC, in 2005.

Thorn wrote the entry on comfort food in the Oxford Encyclopedia of Food and Drink in America, 2nd edition, published in 2012. He also wrote a history of plated desserts for the Oxford Companion to Sugar and Sweets, published in 2015.

He was inducted into the Disciples d’Escoffier in 2014.
