Fast-casual chain Just Salad, with fewer than 40 units in the U.S., is following in the footsteps of industry giants like Starbucks and Chipotle Mexican Grill by releasing a sustainability report outlining bold and progressive goals designed to reduce waste that’s harmful to the planet.

The New York-based company, known for its industry leading reusable bowl program, published Thursday its first Corporate Sustainability Report - an accountability report resembling those produced by national brands looking to use their scale to help the environment.

Strategic goals, which the brand hopes will become a “playbook” for other chains, include creating store ambassadors to educate both employees and customers about sustainability practices, reduc...
