Former Farmer Boys executive assumes newly created position

Slapfish, the fast-casual seafood concept, has named Kenny Hom (pictured) to the newly created role of chief operating officer, the company said Thursday.

The Huntington Beach, Calif.-based fast-casual brand said Hom joins the company from his most recent role as vice president of company franchise operations for Farmer Boys. Previously, he served in leadership roles at Red Robin Gourmet Burgers Inc., Islands and California Pizza Kitchen.

Slapfish, which began as a food truck, has 25 locations nationwide and plans to open four​ ​more restaurants by year’s end. It was founded in 2010.

The concept was honored as a Nation’s Restaurant News Menu Masters Trendsetter in 2016 for such items as fish tacos, lobster rolls, fish and chips and chowder with an emphasis on sustainability.

In September, Slapfish drew an investment from the restaurant division of Houston-based Mac Haik Enterprises Ltd. and a development agreement for Texas and Arkansas.
