Beyond back of the house, more cooks are using induction cook­ing at quick-service restaurants, food trucks, pop-up events, grocery stores and more.

For back of house cooking, the Heavy- Duty Induction Range achieves extremely high cooking efficiency compared to gas with­in the same space. It offers better control over both low and high heat and uses less energy, which means a cooler kitchen and lower HVAC costs. The absence of an open flame increases cooking safety and the ceramic top makes it easy to clean. Choose from dual-hob or four-hob models with manual or digital controls.

In addition, our Induction Wok Range offers just as much power as traditional gas woks, but without the extreme heat. A turbo button and 100 power settings offer more pre­cise, fast heat when needed, especially during high-heat, stir-fry cooking.

The 120-volt Mirage® Pro Induction Range works well for pasta, omelet and other action stations. Using an innovative engine with four IGBTs, cooking power is shared across four parallel switches for 90 percent energy efficiency and added control with 1 — 100 power level settings spanning temper­ature ranges of 80°F to 400°F and higher with built-in temperature memory.

Vollrath’s Downdraft Vent Module is the only front of the house cooking system that incorporates a down draft vent and fire suppression and containment which elimi­nates the need for a hood.

For warming and serving applications, the Buffet Induction Warmer is an ideal solu­tion. Available in all-black or natural colors with subtle LED indicator lights on the control panel and glass, these sleek, low profile units keep the focus on the food, and they maintain consistent warming temperatures with mini­mal amount of electricity as an alternative to traditional chafers or butane-powered stoves. These warmers also have interconnected pow­er cords to allow users to plug in up to three warmers with one power cord.
