Health-oriented restaurant concepts have held the industry’s attention for well over a decade by now, but have yet to penetrate much of the U.S. beyond urban and suburban markets.

Darden Coors is hoping to change that. As CEO of Denver-based Salad Collective — a portfolio of health-oriented concepts MAD Greens, Snappy Salads and Tokyo Joe’s — she sees plenty of opportunity to expand her brands into corners of the country that need access to healthier and affordable foods.

To do that, Salad Collective announced that it would franchise MAD Greens. Coors joined the latest episode of Take-Away with Sam Oches to talk about the potential she sees in the healthy-eating category across the U.S. and why franchising is the perfect way to tap into that potential.
