Assistant food and beverage manager Pascal Castiau combines one and a half ounces of lemon-flavored vodka with three-quarters of an ounce of lemon juice and the same amount of simple syrup.
He shakes that with ice and one muddled green kiwifruit, pours it into a martini glass and garnishes it with a kiwifruit wheel.
