Crack open your jack-o’-lantern and you’ll see pumpkin seeds, but they’re probably not pepitas. Pepitas are seeds without a hull and are only found in specific types of pumpkin.

These green seeds have become a favorite when paired with salads and grain bowls, but pepitas can also be spotted across menus on baked goods and as a topper with proteins to add texture and, when seasoned, a pop of flavor.
