Bruegger’s Bagels has named industry veteran Miguel Fernandez chief operating officer, brand parent Le Duff America Inc. said Thursday.
Fernandez was most recently executive vice president and chief operating officer for Apple-Metro Inc., the Harrison, N.Y.-based franchisee of Applebee’s Neighborhood Grill & Bar.
At Burlington, Vt.-based Bruegger’s, Fernandez will oversee operations for the brand’s more than 300 company-owned and franchised units.

“Miguel brings a remarkable combination of expertise to our team,” Claude Bergeron, Le Duff America’s co-chief executive, said in a statement. “His drive and eye for detail deliver bottom-line business results, but he is also a master at developing the people capabilities of a system.”
Prior to Apple-Metro, Fernandez was with Kansas City, Mo.-based Applebee’s corporate staff, with his last position being vice president of international operations.
In addition to Bruegger’s, Le Duff America Inc. also owns Brioche Dorée, La Madeleine and Mimi’s Café.
