Soon after Bernard Acoca was named CEO of El Pollo Loco in 2018, the former Starbucks executive developed a four-pronged transformation plan that was necessary to complete before the fresh-Mex chicken chain could reboot growth.

Now, after accomplishing his first three tasks (investing in talent, codifying the brand’s mission, and simplifying operations), Acoca said he’s ready to pull the final lever. The Costa Mesa, Calif.-based quick-service chain recently unveiled two new prototype stores geared for off-premise sales.

El Pollo Loco joins a slew of chains that have introduced slick, digitally-focused small format stores to accommodate consumers in a post-pandemic world. The new designs were in the works prior to the pandemic.
