Now, after accomplishing his first three tasks (investing in talent, codifying the brand’s mission, and simplifying operations), Acoca said he’s ready to pull the final lever. The Costa Mesa, Calif.-based quick-service chain recently unveiled two new prototype stores geared for off-premise sales.
El Pollo Loco joins a slew of chains that have introduced slick, digitally-focused small format stores to accommodate consumers in a post-pandemic world. The new designs were in the works prior to the pandemic.
