Theno pushed the industry to higher levels of oversight
Veteran restaurant food-safety expert David Theno was killed Monday after being hit by a large wave while swimming in Hawaii, according to Food Safety News.
Theno was CEO of food-safety consulting firm Gray Dog Partners Inc., in Del Mar, Calif. He was considered one of the industry’s leading authorities on restaurant practices and oversight to prevent foodborne illness.
Theno was brought in as senior vice president and chief food safety officer of Jack in the Box in 1993, after an E. coli outbreak that killed four children and sickened hundreds.
