An employee's schedule can impact every part of a restaurant, from the guest experience to the bottom line, said Barry McGowan, CEO of Brazilian steakhouse chain Fogo de Chão.

"It's at the tip of the spear of really great execution," he said. "Everything is predicated on a great forecast, a great schedule.”

But it isn't easy to get right.

"In a perfect world everybody gets their schedule, all the guests show up at the right time, everybody makes a lot of money, and we all go home,” he said. “Unfortunately, you know, business changes, there's seasonality. There are day part changes and shifts. So, sometimes scheduling and forecasting is somewhat unpredictable, and the technology has been tremendous in helping us predict to look forward," he ...
