DALLAS —Average turnover among hourly restaurant workers rose in 2006, according to an annual survey by People Report, a human resources research firm based here.

The 2006 Survey of Unit Level Employment Practices found that hourly turnover increased by 4 percent on average to 114 percent among the more than 70 restaurant chains polled. Among the study’s other findings was that the number of minorities in executive and unit-level management positions increased by 3 percent last year.
