SEATTLE Organic To Go, the casual cafe and onsite foodservice concern that specializes in upscale organic fare, has acquired local catering company Jackrabbit, which specializes in the production of premium boxed lunches and casual catering.
Terms of the deal were not disclosed.
Jackrabbit generated revenues of approximately $2 million in 2006.
Organic To Go, which last year reported sales of about $9.8 million, operates 12 casual cafes as well as 45 onsite foodservice locations, including the University of Washington Medical Center in the Puget Sound region, the University of Southern California in Los Angeles and Swedish Medical Center in Seattle.
