TUCSON Ariz. Fox Restaurant Concepts of Scottsdale, Ariz., plans to open its first Mexican-inspired concept here by the end of April.

Fox, which has 20 other restaurants in Arizona and Colorado, would open Blanco Tacos Tequila in the La Encantada center in Tucson, featuring contemporary Mexican fare. The opening date is scheduled for April 30.

Sam Fox, a Tucson native, said, "I love the deeply flavored cuisine of Mexico and have always wanted to do a contemporary version of traditional Mexican dishes in a stylish setting with great atmosphere, really good food and creative drinks."

The menu will include such taco combinations as anchiote chicken, lump crabmeat, carne asado, tequila-marinated shrimp and braised short rib beef.

The 75-seat restaurant will feature an open kitchen. Nothing on the menu will be priced at more than $20, Fox said. The bar will offer more than 20 premium tequilas.

Alarge glass wall in the dining room, comprised of two firehouse doors, will open to a patio with a view of the Tucson valley.

Launched in 1998, Fox Restaurant Concepts is the parent company of nine concepts located in Arizona and Colorado: Bistro Zin (Tucson); Bloom (Denver, Scottsdale); The Counter (Scottsdale); The Greene House (Scottsdale); Olive & Ivy (Scottsdale); Montana Avenue (Tucson); NoRTH (Scottsdale, Tucson, Glendale, Denver); Sauce (Tucson, Phoenix, Denver); and Wildflower (Tucson).
