CARLSBAD Calif. John Fuller, chief financial officer of Rubio's Restaurants Inc., based here, is stepping down from the fast-casual Mexican chain to head the financial team at JC Resorts, a San Diego-based hospitality company. Fuller's resignation from Rubio's is effective May 18.

Rubio's officials say they have hired a national search firm to look for Fuller's replacement. Frank Henigman, currently Rubio's controller, will serve as acting chief financial officer in the interim. Rubio's operates, licenses or franchises about 160 restaurants under the Rubio's Fresh Mexican Grill brand.
