Juan George has a unique perspective on restaurant technology. As one of Olo’s earliest hires, George has seen the industry iterate and innovate over the course of 16 years — and arrive at a period in time when technology drives the majority of operational innovation for restaurants.

Today, George is giving back to the foodservice tech world through 858 Partners, an investment firm and consultancy he founded alongside fellow Olo alum Marty Hahnfeld. (The two also recently added their former Olo colleagues Jackie Berg and Seth Hall to their ranks.)

George joined the latest episode of Take-Away with Sam Oches to share his perspective on the past, present, and future of restaurant technology. This conversation is a preview of what’s to come at CREATE: The Experience this Oct. 1-3 in Palm Springs, Calif.; George will deliver a CREATED Talk on Oct. 2 that explores the modern-day tech stack, considerations for emerging restaurateurs who are building their stack, and trends that may affect foodservice technology going forward.
