To stay afloat during the stay-at-home mandate, many restaurants shifted their businesses to meet the moment, diversifying their offerings to include everything from takeout and delivery to retail grocery items and food and beverage subscriptions.
As more dining rooms reopen with lower traffic than in the past due to consumer caution or caps on capacity, chains that offer a diversity of eating and drinking experiences appear to be well-positioned to fare best.
“If there was ever a time to be diversified in your business, this was the time,” said Tim McEnery, founder and CEO of Cooper’s Hawk Winery and Restaurant, which had been one of the fastest-growing Top 200 chains for several years running.
