Salad tossed its weight into the Top 500 in 2023, making leafy greens with assorted additions an exciting segment to watch.

The growing salad segment, along with its sister bowl category, was playing off such trends as customizable offerings, with a variety of ingredients and dressings, and expanding off-premises sales, as virtually all of these brands occupy the fast-casual category. Proteins ranging from chicken to tofu also provided upsell potential.

Brands like Salad and Go were also tapping into the breakfast daypart, with offerings like breakfast burritos, soups, and drinks.
