Flavor of the Week: Arctic char takes center stage on menus

Mild cousin of salmon shines as the main course

Arctic char is a cold-water fish related to salmon and trout. It’s typically menued as an entrée, but can also be used as an appetizer. Its mild flavor compared to its relatives make it a versatile option.

Though awareness of the ingredient is low across all demographics, it has grown on United States menus by 57 percent over the past four years. It’s mostly menued in the northeastern U.S.
