Cabbage is a staple on St. Patrick’s Day, when many celebrate with Irish fare such as corned beef and cabbage.

Adoption-stage trends grow their base via lower price points and simpler prep methods. Still differentiated, items in this stage are often featured as premium and/or authentic ingredients. The authenticity card is often played with cabbage, which is made into the fermented Korean side dish kimchi and the fermented German side dish sauerkraut.
