Chefs riff on drinkable desserts

Diners in the know at Drago Centro in Los Angeles order an off-the-menu drink called the Hot Pistachio. Pistachio purée, sugar and milk are heated together and topped with a vanilla marshmallow. The drink, priced at $10, is available through the winter.

Betony in New York City puts elegance and finesse on display with its hot chocolate, priced at $14. Dark chocolate, molasses and a touch of salt are heated with milk and then spiked with añejo tequila.

Bistro Marquee in Portland, Ore., provides four things consumers love — chocolate, salted caramel, customizability and local ingredients — in its eggnog, priced at $13.

Meringue is folded into chilled chocolate crème Anglaise and spiked with a choice of Oregon spirits, including brandy, bourbon and vodka infused with hazelnut espresso. The drink is topped with a salted caramel chocolate truffle.

The Car Bomb shooter — Guinness Stout, Bailey’s Irish Cream and Jameson whiskey — is turned into a potent dessert, priced at $9.50, at Euclid Hall Bar & Kitchen in Denver. The drink is made with Guinness ice cream, a shot of caramel, cream spiked with Jameson, and seltzer flavored with Bailey’s and chocolate.

Gordon Ramsay BurGR at Planet Hollywood Resort in Las Vegas adds an extra creamy touch to its milkshakes by topping them with pudding. Each treat, priced at $9, is also topped with a cookie. Pictured here are a strawberry shake topped with coconut pudding and a chocolate cookie, and a chocolate shake with caramel pudding and a toffee cookie.

The Bevanda Mattina at Tesori in Chicago lets customers make their own cocktail. A mixture of three parts amaretto to one part amaro is poured over a scoop of vanilla gelato and topped off with espresso. The drink is priced at $12.

Dessert tastings featuring an array of miniature sweets have long been popular among diners. The Met Back Bay in Boston does its own take on with its $14 Boston Hot Chocolate Experience.

Hot chocolate is served extra cozy at five-unit Max Brenner, which offers its hot chocolate, priced at $5.95, in a Hug Mug, which is meant to be nestled in both hands. The drink is available in four flavors: Italian, with hot chocolate and vanilla cream; Mexican, with chocolate red chile, cinnamon, nutmeg and pepper; salted caramel, with chocolate, caramel sauce, sea salt and whipped cream; and Choco-pops, hot chocolate topped with crunchy chocolate wafer balls.
